Jada: Wet wheat in Goodland/ More harvest recipes

I don’t want to say rain, rain go away because it is definitely needed in Kansas; but I am going to say that the rain is getting us behind schedule. Today we played a short testing game but knew we were going to lose.

With not having much to be said about harvest, I am going to share a few recipes I enjoy making. I know being the cook can sometimes have its perks, while other times it seems more like a chore if there is no inspiration. Hopefully theses recipes inspire the chefs of harvest.

Shepherd’s Pie with garlic cheddar mashed potatoes
(Easy to serve up for the field! This recipe has a lot of steps but is easy to make.)

Peel about 8 potatoes and boil them till softened enough to mash.  While cooking the potatoes do the steps indicated in the following paragraph.  When potatoes are soft enough to mash add 2 cups cheddar cheese, 1 cup sour cream, and salt and pepper to taste.

Cut 3 lbs lean beef round cut into cubes then toss with 1 ½  tsp dried oregano, 1 tsp salt, 1 tsp pepper, and 1 1/2 TBS flour till meat is coated. Heat 1 TBS oil in a large skillet over medium heat and add meat, 6 medium carrots, chopped or a small bag of carrot chips to save time, 2 tsp. garlic, and 1 large chopped onion to skillet and cook till softened. Add one 28 oz can diced tomatoes and bring mixture to a boil. Pour into a 9X13 inch pan and top with potatoes. Bake at 400 for 20 – 25 mins or until top is golden brown and filling is boiling. If made ahead bake about 45 – 1 hour until you get the same results.

Note: I have substituted hamburger and stew meat with this recipe. I have also done half beef round/ half hamburger. It all has turned out good. I have also served the potatoes alone with pork chops so I don’t have to take the time to make gravy.

2/ 3 recipes in one…. Herb Seasoned Pork Loin and Pork Sloppy Joes
(If you are like me and love to shop at Sam’s club, I suggest buying a pork loin. They are huge and that usually means I get leftovers. I like to make the pork loin for a meal then shred the rest of the meat for sandwiches. Sometimes I just add BBQ sauce and other times I make pork sloppy Joes. But if you have enough meat, you can do all three!)

Herb Seasoned Pork Loin
Evenly rub the pork loin with olive oil and honey mustard (about 1 to 2 tbs) then lightly sprinkle with crushed rosemary, ground thyme and lemon pepper (about 1 to 2 tsp each). Bake at 350 until center is 160 degrees. I like to serve this meal with fresh green beans. I add a little vinegar, sugar, salt, pepper, and bacon to them.

Pork Sloppy Joes
Simmer the following ingredient on the stove or put in a crock-pot until the ingredients boil. Serve with buns.

3 Cups shredded leftover pork loin
1 14 oz can diced tomatoes
1/2 c ketchup
1 TBS dijon mustard
1 tsp of the following: liquid smoke, dried basil or italian seasoning, chili powder, cumin
salt and pepper to taste
1 cup frozen corn

Chili Seasoned Potato Wedges
(Having an unwelcomed rain day like us? Spice up your day with this side dish which is a perfect to compliment anything from the grill. This also would taste good with the pork loin sandwiches.)

Yield 8 people.

1 TBS onion soup mix
1 TBS chili powder
¼ tsp salt and pepper
1/2 tsp garlic
4 large baking potatoes
1 – 2 TBS canola oil

Cut potatoes in wedges and put them and the rest of the ingredients in a tightly sealed bowl or Ziploc bag and shake until potatoes are evenly coated. Bake at 425 for about 20 minutes, flipping once, until potatoes are cooked through.

Shanee leads her bunny around the campground like a dog- on a leash. She says that she shows her Poncho for 4-H. Her bunny is not very old but already weighs 6 lbs. You can tell Poncho loves his owner because he cuddles with her.

Fun Fact: Debock Harvesting also has a bunny traveling with them on harvest.

Fun Fact 2: I remember a bunch of kids playing at this campground when I was a kid. In fact Shanee’s dad, Shane, was one of the them. Popwell Harvesting and our family have been harvesting in Goodland for many years. It’s fun to see that some things never change-there are still several harvest kids running around playing including kids from Popwell and Hoffman Harvesting. Maybe someday Shanee’s and Kaidence’s kids will play here too…
