InstantPot roast

Cheyenne, Oklahoma—I hopped on the InstantPot train a couple of years ago after my mom recommended giving it a try. I relied heavily on her knowledge and know-how as the idea of pressure cooking made me real nervous. All I could envision was food exploding all over my kitchen! I soon discovered what an impossible scenario that was—electric pressure cooking is pretty darn fool-proof.

The InstantPot is ready to go!

I know I haven’t used this kitchen gadget in nearly all of its capacities, but it has become an important part of my cooking routine and now I couldn’t imagine hitting the harvest trail without it. Anything to not have to fire up the stove or oven in our camper is a win in my book. My camper is hot enough on its own!

I had faithfully used my crockpot to cook roasts until I tried one in the InstantPot. It took it to the next level! This is one of my very favorite recipes. I can’t remember ever hearing someone say, “Ugh. She made roast again!” Ha!

InstantPot Roast ingredients

InstantPot Roast

3-4lb chuck roast
salt, pepper & garlic powder for seasoning
2T butter
2T olive oil
1 medium onion sliced thin
2-3 C of beef broth

Notes: I usually have to cut the roast into 2 or 3 chunks in order for it to fit into the pot.
I use beef broth base—it gives wonderful flavor!

Season roast with spices to taste

Select the “saute” function and allow pot to heat to “hot.”

Add butter and oil to pot. Stir to melt and combine.

Add roast and sear on both sides, 4 to 5 minutes per side.

Add onion on top of roast. Add broth to cover roast.

Place lid on InstantPot, making sure to close the sealing vent.

Select the high pressure “manual” function for 70 minutes. When time is up, allow a natural pressure release for 25 minutes. Carefully do a quick release of remaining pressure.

I generally serve this in a “traditional” roast style. It’s also great on sandwiches with some provolone cheese.
