Kimberly: Fall is here and so is another rain delay

Our theme from this summer has continued to follow us into the fall. The entire state of North Dakota got rain on Sept. 20 and we are finally seeing the sun after six days. It rained for roughly four days and has been foggy, cloudy and the temperatures have been cooler.

Roger did get to start combining canola in New England two days ago but Westhope and Hazelton are still too wet. We were so close to being done with wheat but Mother Nature wasn’t ready for us to be done.
We have tested beans and corn in the Westhope area but they are still a few days away because of moisture from this past week.

There’s not much happening for us this week other than some equipment maintenance, camper cleaning, a little trucking and football games. Well as I am writing this, the clouds are starting to roll in and it is getting darker. We have more chances of rain this week in a few of the spots we are cutting but we are hoping to get the last of the wheat done before then.

Currently we have eighteen employees from all over the United States. We have one employee back from last year and still have the four employees driving truck for us. Everyone asks us where we find our help, well the answers may or may not surprise you but social media is our biggest help. Between Facebook, Instagram and Tik Tok that is where most of them find us. Danica, Karlie and myself keep our pages updated as much as we can so everyone can either keep track of us, parents can see their kids, see what they are doing and help others decide if this is something they would like to do. It’s a fun way to keep everyone involved in our business. A lot of people over the years have asked questions about how do we do it; being away from home that long, or where do the employees sleep, where do you all go, what is the best part, with social media helps answer those questions.

During the fall I am not on the road until weekends so I make up a ton of freezer meals so they are fed through out the week. Here is one of their favorite meals.

    Big Mac Casserole

2 pounds ground beef

1 cup Thousand Island Dressing

¼ cup of mayonnaise

Jar of Pickles(chopped)

2 cups shredded cheese

1 cup diced onions

Bag of Tater tots

Shredded lettuce

Instructions

Brown ground beef and drain. Add thousand island, mayo, diced onion, diced pickles, onion and garlic powder (however much you like). Stir until they are all combined and dump mixture into a baking dish. Spread evenly and add shredded cheese. Layer tater tots on the top.

Bake 40 to 45 minutes at 400 degrees.

Remove from oven and sprinkle lettuce of the top.

Serve and enjoy.
